Vienna Restaurant Inspections: Sushi Yoshi, Paisano's Pizza | Vienna, VA Patch

VIENNA, VA — With Fairfax County Health Department's restaurant inspection reports back online, we continue to look at reports in the Town of Vienna.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Until this summer, food establishment inspection reports had been unavailable online since 2019 as the health department worked to launch a new online system. Residents can search for a specific restaurant or browse a map of inspected locations through the online database.

The health department cautions residents that a single inspection should not be used to evaluate a restaurant. Pieter Sheehan, the Fairfax County environmental health director, says "it is important to look at multiple inspection reports for a facility to truly understand their approach and commitment to food safety and sanitation."

Violations: Food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events, equipment/utensils were observed soiled to sight and touch: interior surfaces of refrigerator and freezer were noted to be soiled and in need of cleaning, sign or poster that notifies food employees to wash their hands is not provided or is not clearly visible at all handwashing sinks used by food employees.

Clarity: 442 Maple Ave, Vienna, Va 22180

Violations: Food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:Pesto pasta bolognese sauce = 57F, stuffed rice balls =49F, feta cheese =44F, lentils=44F, chemical sanitizing ware washing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution.

Pazzo Pomodoro: 118 Branch Rd, Vienna, Va 22180

Violations: Food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: fresh mozzarella cheese=43F, Arasini=43F, meatballs @ wail-in= 51F, Fresh mozzarella @ walk-in=49F, cooked cut potato @ walk-in =48F, Creamy tomato sauce, @ walk-in =48F , raw lamb meat=50F, whole milk, @ walk-in=49F, handwashing facility located at the cook-line was blocked, preventing access by employees for easy handwashing, paper towels were not provided at the cook-line handwashing sink, dispensing and/or in-use utensils improperly stored between use as follows: Ice scoop found stored directly on top of the ice machine and not in a clean scoop holder/dispenser or in cleanable container, floor under the cook-line hand washing sinks and the prep refrigeration next to the hood system is in need of cleaning, ceiling light bulbs are missing protective covering of fluorescent light fixtures, temperature measuring device in the following mechanically refrigerated unit was not properly located in the warmest part of the unit: reach-in refrigerator on the cook-line, no properly working temperature measuring device located in the following cold or hot holding equipment: Walk-in refrigerator, refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: Walk-in refrigerator.

Violations: Food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: Gravy =124, mashed potato = 120F.

Sweet Leaf Cafe: 262 Maple Ave, Vienna, Va 22180

Violations: Food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: All great leaves on the display case=49=54F, half & half @ self service customer station=60F, pico de gallo=48F, quinoa=45F, roasted carrots=44F, Tofu=45F.

Natta Thai Cuisine: 153 Glyndon St, Vienna, Va 22180

Violations: Observed that toilet room doors are being kept open, wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter, floor under the storage shelving inside the walk-in refrigerator is in need of cleaning.

Ledo Pizza: 141 Park St, Vienna, Va 22180

Bazin's Next Door: 111 Church St, Vienna, Va 22180

Violations: Ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Seafood soup, unmarked spray bottles containing cleaning chemical solution were not labeled, 3-compartment sink area / dish machine area, and the cook-line are in need of cleaning, nonfood-contact surfaces of the following equipment had accumulations of grime and debris: surfaces of equipment on the cook-line were observed to be soiled and in need of cleaning, items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises.

Sushi Yoshi: 101 Church St, Vienna, Va 22180

Violations: Raw chicken stored over vegetables in a refrigerator on the cook-line, food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: salmon=55F, tuna fish=44, yellow tail fish=44, white tuna=44, brown rice 55F, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution, food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control: Sushi rice, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Brown rice, sauces, wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter, temperature measuring device in the following mechanically refrigerated unit was not properly located in the warmest part of the unit, dispensing and/or in-use utensils improperly stored between use as follows: knives storied in-between sinks.

Violations: Food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: while milk =44F, Suero=45F, Bone broth=44F, chroline test kit not available on site, food items that are not easily identified by appearance were observed without a label: Flour, Coca powder, sugar, utensil was observed in a state of repair and condition preventing effective maintenance and cleaning/sanitization: Rubber spatulas.

Donutchew: 107 Maple Ave, Vienna, Va 22180

Violations: Ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: A variety of donut sauce mixes, food employee was observed cleaning their hands in the ware washing sink, handsink at the front serving area was being used for dumping and cleaning small utensils, operator is not testing the chemical sanitizing solution to ensure proper concentration of the solution, no Certified Food Manager present at the beginning of the inspection, food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events, no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions, ice scoops placed on ice with handles in contact with the ice.

Violations: Poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparationand was not observed to be date marked: Yogurt, stuffed peppers, cooked lamb shank, chicken barley soup, beef chick pea soup, rice.

Marju Korean Cuisine & Sushi: 128 Maple Ave, Vienna, Va 22180

Violations: Food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: shrimp tempura =84F, breaded string beans=85F, breaded sweet potato=86F, breaded onion=84F, food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hourspast the point in time when the food is removed from temperature control: Sushi rice, no chlorine/bleach test kit located in the facility for monitoring the concentration of the chlorine sanitizing solutions, floor under the 3-vat sink, cooking equipment located under the hood, and other stationary equipment is in need of cleaning, wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter, employees observed working in the food service area without proper hair restraints, food items that are not easily identified by appearance were observed without a label: Salt, sugar, MSG, and other spices, nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Deep fryer exterior compartment , exterior surfaces of cookingequipment including the fryers.

Violations: Live Fruit flies were nopted at the 3-vat sink station and at the mop sink station, unmarked spray bottles containing toxic cleaningchemicals were not properly labeled to identify contents, wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter top and on cutting boards at prep tables, food items that are not easily identified by appearance were observed without a label: Spice container was not labeled to identify contents.

Thai Treasure: 330 Maple Ave, Vienna, Va 22180

Violations: Certified food manager could not provide a food temperature measuring device, some of the spray bottles containing cleaning chemical solutions were not labeled to identify contents, wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter, floors in side the walk-in freezer and walk-in refrigerator are in need of cleaning, screen door at the back entrance to the kitchen is broken and the screen is torn, food boxes, containers, and bags were observed stored on the floor inside the walk-in refrigerator and walk-in freezer, microwave oven interior surfaces aredamaged and no longer easy to clean, nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Exterior side surfaces of Cooking equipment under the hood have grease and debris buildup, items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises.
